Frightfully Fun Halloween Dinner

Tonight is the kind of night you need a fast, easy dinner that’s healthy and {dare I say} fun.  Kids will be busy donning their costumes while visions of sweet treats dance in their heads.  Monster Pizza to the rescue!  This recipe is one the kid’s will love helping with {almost as much as they love trick-or-treating} and let’s them get creative.

 

 Monster Pizza

What You Need:

Pita Bread, Naan Bread or Flat Bread

Pesto Sauce , homemade {recipe below} or store bought

Shredded Mozzarella Cheese

Black Olives, sliced

Bell Peppers (sliced)

Broccoli (chopped)

Uncured Pepperoni

Spread the pita bread with sauce and decorate with toppings, making a silly or spooky face.  Toast Pizzas in a toaster oven or 350 degree oven for about 5-10 minutes.

Perfect Pesto

Ingredients:

1 cup Basil, fresh

1/4 cup Spinach, fresh

1 clove Garlic

1/2 Lemon

1/4 cup Cashews

1/4 cup Pine Nuts

1/4 cup – 1/2 cup Olive Oil

Salt & Pepper

Puree the basil, spinach, garlic, juice from the lemon, cashews and pine nuts in a food processor or blender.  Stream the olive oil in until you get a smooth and cream texture.  Add salt & pepper to taste.  Store in an airtight container in the fridge for up to three days or freezer for up to three months.  Perfect sauce for pizza, pasta or dip for veggies.
