This recipe is perfect for a weekday breakfast when I want to give my family a great start to the day but don’t have a lot of time {pretty much describes every morning}. Packed with protein it’s a great way to get energized and tackle the day. It’s also easy and takes less than 10 minutes to make. Both of my girls gobble it up and ask for more.
Easy-Cheesy Breakfast Burritos
Ingredients:
2 Tortillas (soft)
1 tbsp Cream Cheese
3 Eggs
1/4 tsp salt
1 tbsp Feta Cheese
2 tbsp Shredded Cheese (Mozzarella or Cheddar work great)
2 tbsp Black Beans, drained & rinsed
1/2 Avocado, cubed
2 tbsp Salsa
2 tbsp Plain Greek Yogurt
Heat a pan on the stove (with a touch of olive oil) to medium heat. Spread tortillas with cream cheese and set aside. Whisk eggs and salt until well blended. Scramble eggs using a spatula, gently pulling at the eggs as they cook. Add the black beans, feta and the shredded cheese and gently stir. Cook a few minutes more. Spread the egg mixture horizontally on the tortilla, closer to one edge. Top with avocado. Start with the edge closest to the eggs and roll up into a burrito. Mix the salsa and yogurt together and serve as a dipping sauce. Makes 2-4 burritos. Toddler and kid approved.
