Mom Food to the Rescue!

Because I teach kid’s culinary classes and I have two (hungry) kiddos at home I create a lot of recipes just for kids. Yet in my back pocket I have some great recipes that I save just for me…things I can make fast, are healthy and taste good. So put down that dried PB&J Crust and half eaten apple, today I’m sharing one of my favorite recipes just for mom (or dad). Look for more Mom Food to the Rescue recipes in the coming months…

Healthy Nachos

Ingredients:

  • Tortilla Chips (my favorites are Late July Sweet Potato Tortilla Chips)
  • Kale, chopped fine
  • Salsa (my favorite is THIS)
  • Cheese or Cheese Substitute
  • Lean Turkey
  • Broccoli
  • Grape or Cherry Tomatoes
  • Guacamole
  • Plain Greek Yogurt

Line a pan with parchment paper. Cover Liberally with chips. Sprinkle with all ingredients desired except the guacamole and yogurt. Toast in a toaster oven or 350 degree(f) oven for about 3-5 minutes…till the cheese gets melty and the kale gets crispy.  Top with guac and yogurt if desired. Makes a great lunch or snack!
