Seven Super Salads {mom food}

I love salads.  They are my fuel, my go-to meal and the combinations are endless.  I think my daughters are beginning to share my love of salads and it’s wonderful to see them try new healthy foods.  Here are seven of my favorite salad combinations that are easy to prepare, healthy, fun and above all… delicious.

1. Combine greens, diced raw apple and thinly sliced radishes and carrots.  Top with favorite dressing.

2. Combine greens, raw broccoli, cashews, fresh figs (halved), cucumbers and grape tomatoes (halved).  Top with a fig vinaigrette.

3. Peal and slice beets thinly.  Drizzle with olive oil and salt and pepper, roast in a 350 degrees (f) oven for 10 minutes.  Combine roasted beets with fresh greens and favorite veggies.

4. Combine greens, cooked and shredded chicken mashed with ripe avocado, cucumbers, grape tomatoes and pistachios.

5. Combine blue corn chips, chopped greens, cheese, tomatoes, avocado and a touch of hot sauce.

6. Layer raspberries or strawberries, cantaloupe, pineapple, kiwi, blueberries and red grapes to make a fun rainbow fruit salad.

7. Combine sliced cucumbers and raw tomatoes (cut into small wedges) with olive oil, balsamic vinegar, salt and pepper.
