Sweet Frozen Treats

Put down those number two pencils…summer isn’t over yet!  We still have a bit of warmth and sunshine to squeeze out of Wisconsin and some hot temps on the horizon.  Here are five sweet frozen treats to keep you cool in the dog days of summer.  (ps. they are healthy too – you know me)

 

Frozen Banana Bites

Ingredients:

  • 2-3 Bananas
  • 1/2 cup Chocolate Chips

(I use Enjoy Life brand)

  • 1 tbsp Coconut Oil
  • Shredded Coconut
  • Sunflower Seeds
  • Dried Fruit
  • Chia Seeds

Peel and thinly slice the bananas in ¾ inch pieces.  Place the banana pieces on a parchment lined pan, sticking a toothpick into each piece.  Put into the freezer for 20-25 minutes.  Melt the chocolate chips and coconut oil in the microwave for about 2 minutes (on 50% power) stirring every 30 seconds until melted and smooth.  Spoon the chocolate mixture over each banana and sprinkle with healthy toppings.  Eat right away or return to the freezer in an airtight container until you are ready to eat them.  A perfect summer treat!

Strawberry Basil Ice

Ingredients:

  • 1 cup Ice, crushed if available
  • 1/2 cup Strawberries
  • 1 tbsp Basil
  • 1 tsp Honey
  • 1/2 cup Coconut Water

Add the ice to the blender or food processor and whizz till the consistency of snow.  Add a scoop or two of ice to cups or small dishes.  Rinse the blender/ food processor and purée the remaining ingredients until smooth.  Pour the strawberry mixture on to the ice.  Eat with a spoon or like a snow cone Squeeze the juices onto the ice to make snow cones.  A healthy, fun summertime treat!  Ps. For a grown-ups only version add a splash of tequila!

Peachy Keen Sorbet

Ingredients:

  • 1 RIPE Banana, frozen
  • 1/2 cup Grape Tomatoes, frozen
  • 1 cup frozen Peaches
  • 1 tbsp shredded unsweetened Coconut
  • 2 tsp Honey or Maple Syrup
  • 1/4 tsp Nutmeg
  • Coconut Water

Add all of the ingredients to a blender (except the coconut water) and purée, adding the coconut water until a sorbet consistency is reached.  Serve immediately or store in an airtight container in the freezer for up to a month.  Don’t let the tomatoes scare you, this sorbet is peachy sweet and packed with vitamins and iron, this is one healthy treat!

Yogurt Graham-whichs

Ingredients:

  • 6-7 Graham Crackers, broken into squares
  • 1/2 cup Plain Greek Yogurt
  • 1 tsp Maple Syrup
  • 1 tsp Chia Seed
  • 2 tbsp Dried Blueberries
  • Chocolate Chips (I use Enjoy Life brand)

Stir together yogurt, maple syrup, chia seed and blueberries till combined.  Spoon about a tablespoon of the yogurt mixture between two graham crackers.  Place graham-whichs on a piece of parchment paper and freeze for 20 minutes.  Roll edges in chocolate chips, if desired and return to the freezer for an additional 10 minutes.  Store in an airtight container in the freezer.  A fun and easy treat!

Viva La Smoothie

Ingredients:

  • 3 RIPE Bananas, frozen
  • 2 tbsp Peanut Butter
  • 6 Dates, pitted (room temp)
  • 1/2 cup -1 cup Coconut Milk

A perfect summertime smoothie!  Peel and slice the banana ahead of time and pop in the freezer for at least 20 minutes, so your smoothies will be nice and cold.  Add everything but the coconut milk to a blender.  Stream in the coconut milk till desired consistency is reached.  Whizz it up until a creamy texture is reached. Pour into cups and serve with a straw (it’s more fun that way).
