Sandwich Sushi

The Sandwich…an important part of American cuisine. So many possibilities and yet they can get a little mundane and repetitive. How about sprucing that sandwich up by turning it into sushi?!  My kids love sandwich sushi – I can almost put anything in it and they’ll think its amazing. Maybe it’s the round, bite sized shape that makes them love it so much? Sometimes I give them chopsticks to eat it with – that really makes their day. Here are some of their favorite options:

1. Cream Cheese & Cucumber – Cut a slice of bread into four horizontal strips. Cut cucumber into match size strips. Spread bread with cream cheese, add cucumber to one end of the bread stip. Roll the strip up with the cucumber in the center, sprinkle with fresh or dried dill. (don’t like cucumbers? Try carrots instead!)

2. Strawberry & Spinach – Spread a tortilla or pita bread with a little coconut oil, top with chopped fresh spinach.  Add a row of sliced strawberries to one end of the bread.  Roll it up, keeping the berries in the center. Slice into small rounds (about 3/4 inch in height).

3. Banana – Spread a tortilla, pita or naan bread with either cream cheese, nut or seed butter and/ or jam. Add a pealed banana to one end. Roll up around the banana, slice into small rounds (about 3/4 inch in height). My kids love it when I add chocolate chips or sprinkle some chia seeds on top.

4. PB&J – Cut a slice of bread into four horizontal strips. Spread bread with cream cheese or peanut butter (any nut or seed butter will work) and jam. Roll up the strips (a little pb&j will likely squeeze out a bit=messy fun).

5. Breakfast Sushi – Spread a tortilla or pita bread with nut or seed butter, top with chopped fresh strawberries or raspberries (almost any fruit will work). Roll it up. Spread the outside of the roll in cream cheese then roll in rice cereal. Slice into small rounds (about 3/4 inch in height). Kids love helping make these!

 

The possibilities are endless; turkey and cream cheese, goat cheese and figs, cream cheese an peaches and so on. So grab your favorite bread and favorite sandwich fillers and start rolling!
